You mean you've only seen the boring story set-up and character intro episodes?

Most series don't get good until 4 or more episodes in. Anime stories almost always start off really slow and boring.

Actually it's incorrect to really call them pilot episodes for animes since most animes come about from their original manga forms... Most animes stick to what the manga has already laid out so this tends to make most first episodes not as spectacular as they could be for some animes.

So yeah, general rule is that you have to watch a few of the starting episodes of the anime to actually get a good gauge of it, not just the very first.
